Banana can be one of these flavors that could get lost once you inhale with this. It can be really subtle taste. It always bums me out if that happens, cause I LOVE the taste of banana. And so does the hubs.

And they are so moist, they nearly melt in your mouth. Additionally, with both banana and oats in them, they are basically healthy, correct? And perfect for breakfast!

Creating them is just as easy as eating them.

You have the typical suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You begin by mixing all those beautiful components together.

I have to warn you. The odor of that mixture -- with the banana -- is equally intoxicating. The hubs was at the kitchen making the dough together with me (we left a deal that included him with me) and we both had to work hard not to put our faces, or even a straw, straight into it.

Then you add all the dry ingredients (which means you only use one bowl -- yay!) And mix it all together!

To bake them, spoon about a tablespoon of bread and produce a thick disc, instead of a chunk. They spread a bit after baking, so don't place them too close together. Bake them for approximately 10-12 minutes to get a fine, moist cookiecutter. So yummy!

1 additional thing I love about this recipe is really where it came from.

My grandmother (my father's mother ) passed out in 2008. After I started draining a lot a few years back, my uncle gave me her cookbook that he'd had and didn't use. I've had it on my list to make a number of her desserts since.

It was a tradition for my grandma to make them every Christmas! She also gave everyone a huge tin of them, which had been quite a feat with 6 sons.

I now know precisely how much of an accomplishment it had been! My goodness. She made them using a conventional gaufrette iron which goes over a open flame. My dad and I had them on the cooker. They cook very quickly and you have to be exact. Too little time and they sort of disintegrated into iron. Overly long and they burnt to the iron and also we had to wash it out.

My dad was massaging the batter and taking away the cookies, I had been operating the iron, the hubs was time things. It took many tries to get it right, but they had been so good! I have attempted to make them on my own and it never works. I would like to share the recipe, however, the dang irons are so tough to discover. And expensive. Sooner or later, I would love to just make a cookie with the identical gaufrette flavor.

For today though, I am sharing these biscuits. I don't believe I ever had them when she made thembut they're from her novel.

It is such an enjoyable recipe book to look through, too. There are so many handwritten pages, including clippings and newspaper recipes that were taped into the book. I like the way they used to compose recipes at the find more paper -- they had the person who filed it is name and cute little tales. It is so fun to browse through them! What another time on the planet!

Anyways, I do not really know where this recipe originated from. The newspaper looks like it had been on a flier from their square dance class or something (they have been big to square dancing). It's undoubtedly from West Virginia, where they lived.

Either way, I am so glad to finally talk about a recipe from her book with you! I made a couple of adjustments to make them thicker and puffier and they're delicious. There will be more to come from her recipe book, but for the time being like the banana.

Return: 34-36 COOKIES



3/4 cup salted butter, softened (I use scatter Butter)

1 cup brown sugar, packed

1/2 cup sugar

1 egg

1 teaspoon vanilla extract

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 tsp ground cloves

2 tsp cornstarch


1. Mix together egg, brown sugar, sugar, egg, vanilla extract and mashed bananas until well blended.


3. Stir in vanilla.

4. Preheat oven to 350 degrees.

5. Spoon tablespoons of dough onto a cookie sheet covered with parchment paper. Flatten dough a little bit, into thick disks. They'll spread a bit when baked.

6. Bake for 10-12 minutes or until edges just start to gold.
